This is one of my all time favorite dishes. I make it in practically every way imaginable. That includes that, which always, always, ALWAYS, gets a thumbs up from my friends and family. This time, I used my new 10-cup electric pressure cooker so I could get it into the oven without burning myself, but if you don’t have one, or don’t feel like springing for one, please don’t let that keep you from giving this recipe a try. This dish is moist, delicious, fresh and fast. And can pretty much be made in an instant. Enjoy!
First, you chop up your zucchini, and then you heat it in the microwave or on the stovetop. You want to make sure to allow it to cook to at least tender, but not mushy or al dente. If you heat it directly in the microwave, you need to watch out for burning it.
Once it is cooked, you want to mash it. You can do this with a hand mixer in a bowl, or you can do it in a food processor. I like to do it with the food processor because you don’t have to get dirty. Because it is already cooked, I don’t mash it too much, but you can always go further if you like.
Next you saute onion, pepper, and garlic with a teaspoon of extra virgin olive oil.
